
Daniel loves bread. I love crusty bread. We’ve tweaked this recipe several times to adjust the flavor. You do not need to knead this bread. You can use a 9×5 loaf pan or Lekue Silicone Bread Maker which makes a football shaped loaf of bread. The Lekue Silicone Bread Maker is both the bowl and the baking dish which reduces the number of dishes during clean up.
Ingredients:
4 cups whole wheat flour
2 1/4 tsp yeast
1/2 tsp salt
2 tbsp agave or molasses
2 cups plus 4 tbsp water
Optional: seasoning such as Kirkland Organic No-Salt Seasoning, garlic powder, chili powder
Directions:
1. Add flour, yeast, salt and optional seasonings in a bowl and mix.
2. Heat water in microwave to lukewarm, usually 1 minute on high, and add agave or molasses to dissolve.
3. Mix wet ingredients into dry ingredients until you have well combined dough. No need to knead. Dough will be wet.
4. Add to greased 9×5 pan or leave in Lekue Silicone Bread Maker. Cover with clean towel. Let sit to rise for 30 minutes.
5. Preheat oven to 390°F.
6. Bake bread for 40 minutes. If using a Lekue Silicone Bread Maker, flip bread over inside silicone container after 30 minutes if crustier bread is desired.
Notes:
- We made bread for a vegan meet up in Quartzsite, AZ. Everyone loved the loaf with rosemary! We added about 1 tbsp of chopped dried rosemary.
