Day #36 of Our Epic Trip

We spent another day at the campground just relaxing and getting things done. We took the boys for a walk and picked up more pecans. I did some cooking and baking. I made whole wheat bread, soy milk, and a pot of pressure cooker goodness. I also whipped up a batch of hummus and dog food.

This week I started using an exercise app, JustFit. It drew me in with ads of exercises done while lying in bed but has proven to provide a good workout. I haven’t done any of the in-bed exercises though. If you’re interested, their website offers some free exercises.

No Knead Whole Wheat Bread (Vegan, Oil free)

Daniel loves bread. I love crusty bread. We’ve tweaked this recipe several times to adjust the flavor. You do not need to knead this bread. You can use a 9×5 loaf pan or Lekue Silicone Bread Maker which makes a football shaped loaf of bread. The Lekue Silicone Bread Maker is both the bowl and the baking dish which reduces the number of dishes during clean up.

Ingredients:

4 cups whole wheat flour

2 1/4 tsp yeast

1/2 tsp salt

2 tbsp agave or molasses

2 cups plus 4 tbsp water

Optional: seasoning such as Kirkland Organic No-Salt Seasoning, garlic powder, chili powder

Directions:

1. Add flour, yeast, salt and optional seasonings in a bowl and mix.

2. Heat water in microwave to lukewarm, usually 1 minute on high, and add agave or molasses to dissolve.

3. Mix wet ingredients into dry ingredients until you have well combined dough. No need to knead. Dough will be wet.

4. Add to greased 9×5 pan or leave in Lekue Silicone Bread Maker. Cover with clean towel. Let sit to rise for 30 minutes.

5. Preheat oven to 390°F.

6. Bake bread for 40 minutes. If using a Lekue Silicone Bread Maker, flip bread over inside silicone container after 30 minutes if crustier bread is desired.

Notes:
  • We made bread for a vegan meet up in Quartzsite, AZ. Everyone loved the loaf with rosemary! We added about 1 tbsp of chopped dried rosemary.

Day #35 of Our Epic Trip

Southern Trails RV Resort, Unadilla, Georgia

We went to Plains, GA, the birthplace and home of President Jimmy Carter. He grew up on a farm in this small town. And I mean small town. We were surprised that he would chose to continue living in such a small town but it really speaks to his character. His current house is right on the main road although you can’t see it from the sidewalk. How weird it must be to live next to a former president with secret service staff constantly on guard. On the other hand, it’s probably a pretty safe neighborhood.

Next we went to Americus, GA which we had previously driven through and thought it looked like a fun town to explore. We took the boys for a walk around downtown but most of the shops were closed or empty. We did go in the Windsor Hotel, built in 1892, and explored some of the amazing old architecture.

We also stopped at Walmart in Americus for some groceries. So far, we have been able to buy our staples like unsweetened almond milk (which is a necessity for our coffee) and the occasional tub of tofu at the Walmarts in the areas we have traveled.

Day #34 of Our Epic Trip

Daniel spent most of today booking camping reservations for us and I mostly worked on my computer. We did go to a glass painting activity at the campground in the evening. It was fun and we enjoyed talking to other campers.

One thing we’ve had to figure out is how to get mail and packages while traveling. There are mail services where you get an address to establish residency and they will forward your mail to you when requested. Since we already have an address in Tennessee and family willing to receive our forwarded mail, we didn’t feel like paying for this service. Luckily, a lot of mail can be eliminated by choosing ‘paperless’ on accounts. The struggle is relying on USPS to deliver the mail our family sends to us in a timely fashion.

Some campgrounds will let you receive packages. We’ve come to realize we were very spoiled in Michigan with Amazon Prime. We could have things delivered in one to two days. Sometimes deliveries arrived a few hours after ordering in the middle of the night! They say things are slower in the south and I guess that includes Amazon deliveries.

Day #33 of Our Epic Trip

We had a day of adventure. We started by exploring the small town of Unadilla which seems like a very sleepy town. There were some cool things like the old jail and courthouse.

We went to Camp Sumter at Andersonville National Historic Site and the National Prisoner of War Museum. The museum was very eye opening and provided tidbits of information such as the POWs of the Japanese resorted to drinking the blood of the dying when they ran out of rations as they were being shipped to Japan.

Camp Sumter was a horrid place where nearly 13,000 Union soldiers died in a little over a year and, at its peak, it held 32,000 prisoners in a 26.5 acre field with only makeshift tents and dirty stream water for drinking.

Next we went to Providence Canyon State Park in Lumpkin, GA. The beautiful landscape is known as the “Little Grand Canyon” and is the result of tree clearing and farming in the early 1800s. It took only 25 years for rainwater to carve 5 foot deep gullies into the soft clay and sediment. Water has continued to erode the land resulting in the deep crevices we see today. It was beautiful and I loved that part of the trail was a stream bed. The smell of the red clay reminded me of high school ceramics class.

We ended today’s adventure with a stop at Richland Distilling Company in Richland, GA and tried a flight of rum. The rum was good (rated best American sipping rum according to Forbes Magazine) and the building was filled with antiques like a 250 year old dowry chest from India and a 17th century French distiller. We were told there also was a table older than our country but the owner of the distillery moved it to his house. I’m thinking he’s a man we need to befriend because I love antique furniture.

Day #32 of Our Epic Trip

Marcel seemed to have some pent up energy so we took him in the field behind the campground and let him run off leash. We also picked fresh pecans – they were so good!

We played table shuffle board and darts in the community center of the campground. I won’t reveal who won because we are both pretty competitive. We can’t play Connect Four anymore because one of us gets too competitive.

We ended our night by sitting outside in the warm weather and had Penne with Chickpeas and Spinach for dinner.

Days #30-31 of Our Epic Trip

Cracker Barrel, Kennesaw, Georgia

It’s a travel day and we are headed south! While we are sad to leave our new town and new friends (especially Tim!) we are excited to finally be on the road for our trip around the US. Before leaving Chattanooga, we stopped at an Indian grocery store and got 5 lbs of chili powder. We love some heat in our food!

We drove 140 miles into Georgia to stay in the parking lot of a Cracker Barrel in Kennesaw, GA. There are no hook-ups but it’s just for one night and it’s free!

We ventured into the store of Cracker Barrel once we got settled. We both got some old fashioned candy. Daniel spent a little time finagling the inverter and battery connected to the Tesla so we would have more power.

After a fairly restful night (except for Marcel’s 3am potty request), we drove through Atlanta and are staying for two weeks at Southern Trails RV Resort in Unadilla, GA. We parked in the back of the property and have a view of fields and trees. There are pecan trees on the campground and they encourage you to pick them. We also saw cotton fields while driving which Daniel thought was neat. He is eager to pick some cotton himself.

After setting up, we played bingo at the campground and had fun! We both won and may go back for another night of bingo during our stay.

Tennessee Campgrounds

We love Tennessee! The people are so friendly, outdoor activities abound, and there are plenty of fun towns and cities.


Dunlap, TN • ⭐️⭐️⭐️⭐️⭐️ • Full hookup

This is a wonderful gem of a campground located in Sequatchie Valley. The area is an outdoor enthusiasts mecca with plenty of opportunities for hiking (waterfalls abound), kayaking, and even paragliding. But the best part of this area is the people and that includes the campground’s owner, Tim. There are 17 full hook-up sites and Tim offers full service – he even helps to level your camper when you arrive. All the sites are situated facing north so you have shade while enjoying the beautiful views of the mountains. There is a lovely bathhouse with 3 full, homestyle, bathrooms which are kept very clean. You’ll find Tim feeding the cows, chickens and other animals on neighboring properties every morning. Tim is full of knowledge on the area and loves to chat with his customers. Bonus: There are two disc golf baskets to practice and improve your skill and Tim is surprisingly good! We paid $35.10 per night with a discount for a full week. Otherwise, it was $40.95 per night. (Nov 2023 and Nov 2025)

Day #29 of Our Epic Trip

R and R RV Campground, Dunlap, Tennessee

Today is our last day in Dunlap, TN so we went for a walk on our property. It was the last time the boys will be off leash for a while. Daniel and I both agreed that leaving Dunlap is bittersweet. We are so excited to travel across the country but we already feel like Dunlap is home.

We did some more exploring on the property. We found a beautiful rock outcropping with a view similar to Yellow Cliff. It’s either on or near our property. We’ve named it “Fudge Outlook”. I’m most excited about building trails to the cool areas we’ve found. I like the idea of a morning walk with a good mug of coffee.

It was a beautiful day although it was cold. We have a neighbor, Rick, who gave us some suggestions on where to travel. We also played disc golf with Rick and Tim. They were both surprisingly good at it.
