Soy Milk (Vegan and Easy)

When I first started making soy milk, I perused many websites for instructions. They all claimed you need to soak the beans and then remove the skin. This took forever and made it not worth the effort to make soy milk. Well, guess what? You don’t need to do all of that and hardly any work is needed to make good soy milk.

A few years ago, we bought a soy milk maker on Amazon (Joyoung $139). It has a “dry beans” setting and that is the magic button we now use.

We use our soy milk to make hummus, cook with, and put in cereal or smoothies.

Ingredients:

  • Use the measuring cup that came with your soy milk maker (ours came with a 5/8 cup) and fill it with good, organic soy beans. The quality of the beans really makes a difference.
  • Cold water, preferably filtered. Use soy milk maker manufacturer’s recommended amount.

Directions:

  1. Rinse the soy beans in cold water.
  2. Add soy beans to soy milk maker.
  3. Fill soy milk maker with manufacturer’s recommended amount of cold water.
  4. Push the button for soy milk using dry beans.
  5. Once machine is done, strain the pulp (okara) from the milk.
  6. Store milk in tightly sealed container in refrigerator and use within 3-5 days.

Notes:

  • Use the okara to make vegan ricotta cheese.
  • Okara has many nutritional benefits: it’s high in fiber and minerals.
  • The beans make a big difference. Use good quality soybeans. We like Laura Soybeans from the Chambers Family Farm in Iowa. You can get them on Amazon.

Days #69-70 of Our Epic Trip

Wilderness RV Park, Robertsdale, Alabama

We were awakened at 4:30am by a tornado warning. We piled in the car and drove to a nearby Buc-ee’s because Daniel figured we would be safer in their store and the car could get some charge. There were 60mph wind gusts but we did not see any damage in the campground. There were several reports of tornadoes in the area.

We explored Fairhope, AL. We were told by a nice lady (Sassy Blonde Traveler on Facebook) at Tom Jones Pottery that Fairhope is an “elite” town and has suffered from skyrocketing prices due to Californians moving in. We found the town to be quaint with nice southern homes. Downtown offered lots of shopping and nice restaurants.

Driving out of town to Mobile, AL, we stopped at Tolstoy Park where a man named Henry Stuart built a small round hut in 1926 after he had been diagnosed with tuberculosis. He made the concrete blocks himself and dated each one with the date it was made. The hut is in the middle of an office complex parking lot but it is also on the National Register of Historic Places.

Finally, we ended our excursions with a trip to Costco where we were lucky enough to find their Organic No Salt Seasoning which I put in most of the food I make. It has been out of stock for a while now and I was worried they were going to discontinue it.

We went to coffee hour at the campground. We met Scott, who has been living full time in his camper for years. He offered advice on camper maintenance and things to be aware of which are more likely to fail on a camper. One thing we are going to start doing is turning off our water when we leave the camper. He was very friendly and we’re glad we met him. We also talked with Jerry, a veteran, and his wife who live at the campground and a newlywed couple from France who have the cutest accents.

Unfortunately, we have decided that our white picket fence weighs too much and we need to replace it with a metal wire fence which we recently purchased. Daniel and I worked together to alter the picket fence for camper use so it is bittersweet to part with it. We took it to our Dunlap property this week and covered it with a tarp for future use. Daniel spent the day dismantling the wooden frame he had built on the back of the camper to transport the white picket fence and figuring out how to strap the new metal fence to the bumper. The new fence cut 90 pound from our total camper weight!

Well, we had a mishap last night. The wind destroyed our canopy tent. I was in the tent when it blew from over my head and multiple things when flying into the road. I’m lucky I wasn’t hurt. The frame was bent or broken in multiple places so there was no salvaging it and we had to move everything into either the car or the camper. Daniel ordered a new tent on Amazon he thinks will hold up to the wind better.

We spent the day relaxing since we have been on the go for the past several days. It was nice to catch up on laundry and do some cooking. We also explored the campground a little. There is an area where someone made some trails into the woods with solar lights and little decorations. We asked about it in the office. It’s the efforts of a camper who is a veteran and has PTSD. He creates the trails as therapy.

We drove to Dunlap, TN and will be meeting tomorrow with the excavator, Dan Funk, who will put in our septic system and the pad for our house. We have invited Tim to join us and we are excited to see him. The boys know his name so they were excited when we asked if they wanted to see Tim.

Driving through Alabama, we came across some unique names for the waterways we crossed over: Burnt Corn Creek and Murder Creek were my favorites. The south does not mess around when choosing names.

We met Dan Funk at our property to discuss the site for the septic system and the excavation of the site for the house. We have a plan and we feel good about working with Dan. He is going to start clearing the land soon.

It was so good to be on our property again. The boys loved running around off-leash. Tim joined us and it was so good to see him. Peter seemed a little upset when he left as he kept looking down the driveway for him.

We drove back to our campsite in Alabama. We both agree that driving for long periods of time is difficult for us. I don’t know how truckers do it but I’m glad they do – I like my Amazon orders!

St. Andrew’s State Park, Panama City, Florida

We took a morning walk before leaving for Panama City Beach, FL. While walking on the trail we heard and felt a loud boom. We’re not sure what it was but it sure made us stop in our tracks. There is an Air Force Base in the area so it was probably one of their planes.

We are staying at St. Andrew’s State Park in Panama City, FL tonight. Our site is right on the water overlooking a bay. We drove around Panama City Beach but it was too touristy for us so we went back to the park and watched the sunset from the beach. A nice man offered to take our picture. I collected a lot of seashells. Once, on the beach in Petoskey, MI, I overheard a father tell his young daughter that she can’t have all the rocks. I immediately knew she was a kindred spirit because I too wanted to collect all the rocks I saw. I think the same holds true for seashells.

Wilderness RV Park, Robertsdale, Alabama

We left Florida and drove to Alabama. We are staying at Wilderness RV Park in Robertsdale, AL. It’s an RPI campground so we are getting a great nightly rate ($10.40).

Since we are staying here a week, we set up our canopy tent which houses some of our cooking appliances (pressure cookers, soy milk maker) and laundry appliances. At every new campsite I sweep the floor before putting down the rugs. For longer stays, I mop and wipe down surfaces. Sometimes I dust all the cabinets. I always chuckle when cleaning the camper because it reminds me of the TV shows Gypsy Brides US or My Big Fat Gypsy Wedding (found on YouTube) where the young brides find themselves cooped up in a travel trailer making sure it’s spotless while their new husbands are at work.

Sautéed Greens (Vegan)

Leafy greens are so nutritious. We add greens to smoothies and put them in our pressure cooker meals. Lately, we have been eating sautéed greens with every dinner. You do not need to use oil to make delicious sautéed greens.

Follow the recipe exactly or use your favorite leafy greens and spices.

Ingredients:
  • 1/2 cup onion, diced
  • 2 tbsp garlic, minced
  • 8 oz Brussels sprouts, chopped
  • 1 large bunch collard greens, chopped
  • 1/2 to 1 cup low sodium vegetable broth or water
  • 1/2 tbsp chili powder
  • 2 tbsp no salt spice blend like Mrs. Dash
  • 1 tsp black pepper
  • Salt or salt substitute to taste (optional)
  • 4 oz mushrooms, chopped
  • 8 oz spinach, chopped
Directions:

1. Add onion, garlic, brussels sprouts, collard greens, and broth or water to a pan. Add spices. Cook covered on medium heat, stirring occasionally, until greens are partially tender.

2. Add mushrooms and spinach. Continue to cook on medium heat until all greens are tender.

3. Adjust spices as needed.

Notes:

1. Add 1-2 tbsp spicy mustard for a different flavor.

2. To save time, I use a food processor to chop the ingredients.

Florida Campground Reviews


White Springs, FL • ⭐️⭐️⭐️⭐️⭐️ • Electric/water

We stayed here for two nights and paid $34.70 per night. We had pull-thru site 34. The campground is small and most of the sites have some privacy. Water and electric are available at the sites but there is no sewer hookup. There is a dump station at the entrance. We really enjoyed this campground. It was quiet and peaceful. They have a free museum dedicated to Stephen Foster, an 1800s American song composer of 200+ songs including “Oh! Suzanna”. The museum contains dioramas from the 1950s which are incredibly detailed and animated. The park also borders the Suwannee River. The town of White Springs is small but was the home of a sulfur springs resort in the 1800s so it was a popular tourist destination. Unfortunately, you can no longer go up on the sulfur springs platform. We did not camp here long enough to have a lot of recommendations on activities. Tip: When you reserve a site online, it may show up on your credit card statement as “Tyler Technologies”. (Dec 2023)


Thousand Trails Three Flags

Wildwood, FL • ⭐️⭐️⭐️⭐️⭐️ • Full hookup

We stayed here for two weeks and paid $0 per night as Thousand Trail members. It was our first experience with a Thousand Trails campground. When we arrived, we were driven around in a golf cart to look at the available sites. We picked a beautiful site next to a cow pasture (site 148). The campground has many amenities including a recreation center with many community run activities, a pool, pickleball courts, a large laundry room, and a dog park. We received several text messages from management to ask if everything was going well with our stay. The campground was fairly quiet and the people were friendly. Many things to do nearby. (Dec 2023)


T.H. Stone Memorial St. Joseph Peninsula State Park

Port St. Joe, FL • ⭐️⭐️⭐️⭐️⭐️ • Full hookup

This is a brand new campground. We were told by the camp host that a storm wiped out the previous campground and the current one was built within the past year. It’s very nice. There is no shade from trees but the sites are spaced wide apart. We had site 14. There are tent sites with screened in platforms to pitch a tent. There is a 1.6 mile trail that can be accessed from the campground entrance. There are no views of the water from the campground due to the dunes but there is access to the beach. There are washers and dryers at each of the two restroom buildings. The park’s gate is closed at night so you will need a passcode to get in. We paid $39.72 per night. (Jan 2024)


St. Andrew’s State Park

Panama City Beach, FL • ⭐️⭐️⭐️⭐️⭐️ • Full hookup

We only stayed one night at this campground. We paid $45.90 for the night. The campground is right on the water and we were lucky to have a site bordering the water. It was quiet and seemed well maintained. There is a locked gate to get into the campground which is used 24/7 so you will need a passcode. There are enclosed tent platforms. There is a big playground for kids and adults. They have a large checker board and corn hole. There is also a shuttle to Shell Island but we were not here long enough to explore. (Jan 2024)


Encore Southern Palms

Eustis, FL • ⭐️⭐️⭐️⭐️ • Full Hookup

We stayed at this campground for two weeks and paid $0 per night at Thousand Trails members. We stayed in campsite 777 which was on the edge of the property next to a residential area. The campground offered shuffle board, a pool, a gathering hall with a small library, and a laundry room. They offered a Wednesday night happy hour with two free drinks and chips. The campground was clean and quiet although road noise did not die down until after midnight. (Nov-Dec 2025)


Thousand Trails Peace River

Wauchula, FL • ⭐️⭐️⭐️⭐️ • Full Hookup

We stayed at this campground for three weeks and paid $0 per night as Thousand Trails members. We stayed in campsite F1. We originally had 3 separate reservations in different sites because of the newer Thousand Trails assigned site policy. We have never had an issue asking for a change in site or to have our reservations combined so we didn’t have to move. That is until this campground and their front office person, Morgan. She was very resistant, perhaps incapable, of looking at their schedule and figuring out a solution for us. Morgan treated us like we were irritating her and gave us a lot of attitude. We are so grateful that a few days later the property manager, Choula, was able to keep us in our site for the entire duration of our stay and did so happily. The campground is next to a major road so we heard a lot of road noise. It also seems to be a popular campground for people with children and their noise. We enjoyed the trails in the campground but there isn’t much to do in the immediate area. Sebring is the closest decent sized town and is a 45 minute drive. St. Petersburg and Tampa are about a 90 minute drive. We had 3 bars Verizon 5G. Update: We stayed another week on our way north and had a better experience. All the full hookup sites were taken so we ended up near the river in an electric/water site (C58). They do offer a free, weekly honey wagon dump but you need to sign up days in advance. (Dec 2025 & Feb 2026)


Encore Pioneer Village

North Fort Myers, FL • ⭐️⭐️⭐️⭐️⭐️ • Full Hookup

We stayed at this campground for two weeks and paid $0 per night as Thousand Trails members. We stayed in campsite D3-14 which is a site on the edge of the property. A railroad track was behind our fence and we really enjoyed seeing some trains go by. The campground was quiet and populated by mostly older people. It is with an hour drive to many parks and tourist areas like Sanibel Islands. We had 3 bars of 5G with Verizon. (Dec 2025 – Jan 2026)


Encore Miami Everglades

Miami, FL • ⭐️⭐️⭐️⭐️⭐️ • Full Hookup

We stayed at this campground for 7 nights and paid $22.60 per night as Thousand Trails members. We stayed in campsite 223. The campground has a really nice putt-putt golf course, a deck where activities take place, a pool (closed during our stay), and a walking trail around the whole property. We enjoyed our stay and found the campground to be quiet and conveniently located. We had 2 bars Verizon 5G. (Jan 2026)


Bayfront RV Park

Islamorada, FL • ⭐️⭐️⭐️⭐️⭐️ • Full Hookup

We stayed at this campground for one week and paid $92.86 per night. We stayed in site 7 and really enjoyed our stay. This campground is small with only 11 sites. It was quiet except for music coming from the restaurant next door for two events they had there (one was a wedding and we enjoyed the music) but the music ended by 9:30-10:00pm both times. They have kayaks you can use as part of the amenities and you have access to Founders Park where they have a dog park, beach, sports fields, and free concerts. We had variable cell coverage with Verizon: 1 bar LTE to 2 bars 5G. (Jan 2026)


Encore Highland Woods

Pompano Beach, FL • ⭐️⭐️⭐️ • Full Hookup

We stayed at this campground for 7 nights and paid $0 per night as Thousand Trails members. We stayed in site 118 which is right next to the road. We heard, day and night, loud cars driving by and back-firing. I think the campground management should complain to city council about the car noise as it definitely detracts from the enjoyment of their campgrounds. At least once, we heard what sounded like gunfire and then saw police racing by shortly afterward. The campground is right next to another Encore campground which is bigger and has more amenities. Both campgrounds were full of French-speaking Canadians, who were friendly, but made it difficult to join in campground activities as we don’t speak French. We had 4 bars 5G with Verizon. (Feb 2026)

Days #62-63 of Our Epic Trip

St. Joseph Peninsula State Park, Port St. Joe, Florida

We left Walmart after an uneventful night. It was quiet after Walmart closed at 11pm. We drove to the US Forest Service Park Office in Crawfordville, FL to get an America the Beautiful Senior Lifetime Pass for national parks and federal recreation lands. This pass will give us free entry to over 2000 national parks and also offers some discounts.

Florida has the best names for the state parks and forests. We drove through Tate’s Hell State Forest and apparently the name is based on local legend.

It was another travel day to get to St. Joseph Peninsula State Park in Port St. Joe, FL. It is right on the gulf coast. We will be staying two nights here and it looks like a brand new campground. It’s beautiful! Daniel said the area looks like something out of a Dr. Seuss book because of the trees and vegetation. We took the boys for a hike and then we went to the beach and watched the sun set over the Gulf of Mexico.

It’s raining today so we decided to explore some nearby towns. We went to Port St. Joe, FL and Apalachicola, FL to walk around and visit the shops. Then we drove around St. George Island and marveled at all the houses on stilts. The rain stopped just in time for a sunset and a double rainbow.

Our Year in Review (2023)

Wow! A lot happened in 2023!

Daniel and I both retired in March 2023. We enjoyed our healthcare jobs and helping people but we were dreaming about other adventures. To celebrate our retirement, we spent two weeks at our new property in Tennessee – 36.4 acres overlooking the Sequatchie valley.

We got married in July 2023 in the backyard of our home. We had food from our favorite restaurants, we were surrounded by close family and friends, and we listened to good music (Thanks MacKenzie!). My sister was the officiant (Thanks Kim!). It was a sweetly emotional, relaxing, and just perfect day for us.

Such a joyous day

We spent our honeymoon camping at Hocking Hills in Ohio. Such a pretty place and, dare I say, unexpected for Ohio. We hiked the state park and saw Old Man’s Cave. We explored surrounding towns, found a 600 year old oak tree, and went to the John Glenn Dark Sky Observatory.

We sold our house. We got the house packed up in about a month. Wow, does stuff accumulate over the years. I told Daniel that I never want to buy anything but consumables again. We stored all the stuff we wanted to keep at my parent’s house (Thanks guys!). The couple we sold our house to are dog lovers and really nice. They said our house had a good vibe. I think they liked our party deck.

We stayed in our camper for two months at my parent’s house. It was nice to test out living full-time in our camper. We had to figure out things like laundry, how long it takes our black tank to fill up, how well the inverter and battery will power the camper, etc.

Days #60-61 of Our Epic Trip

Thousand Trails Three Flags, Wildwood, Florida

We spent the day packing up because we are leaving tomorrow. We hung out with Mike and Diane and said goodbye. The boys love hanging out with them and didn’t want to leave. Peter hung his head, tucked his tail, and slowly walked out of their house after much coaxing.

Walmart Parking Lot, Perry, Florida

We got up at 3:30am to go to Ponce Inlet Dog Beach in New Smyrna Beach, FL to watch the sunrise. It was a beautiful, clear morning. The sand was silky smooth. It was quiet and peaceful. It was the best way to start 2024 with some meditation and reflection. Daniel enjoyed driving the Tesla on the beach. The boys enjoyed it too. Marcel was really interested in chasing the birds and Peter enjoyed smelling new scents.

We left Wildwood, FL and drove to the Florida panhandle. We stayed the night in a Walmart parking lot in Perry, FL. We are still getting used to “boondocking” but, as long as we can shower and make coffee, it’s a doable option to get us to our next destination. We decided to use our propane stove to heat up our water for coffee which required a new pot. Good thing we stayed at Walmart!

Our day was filled with a lot of cooking and laundry as we enjoyed the beautiful weather. On our travel days or adventure days, I like to have something healthy already made so we don’t have to scramble to find food. I made a big batch of sautéed greens and puréed a lot of onions to freeze for future use. I like to use Souper Cubes when I batch cook. I prefer the 1 cup and 1/2 cup versions as they provide the right portions when cooking (1/2 cup onion for sautéed greens) or serving (1 cup for lentils or greens). I also use the 1 cup portion for the dog food I make for the boys.

I also love Silipint lidded bowls. They’re cute and durable and very functional. You can use them in the freezer, microwave, or oven. They are food grade and do not leach chemicals into food. They also have great sales on clearance items during which the bowls are $3-4.

We hung out with Mike and Diane in The Villages, FL. They showed us a couple recreation centers within this massive retirement neighborhood which had pool tables, crafting, swimming pools, darts, shuffle board, pickle ball, etc. We went out to eat at Brownwood Paddock Square, a town square at The Villages. They have live music every night and a lot of people were dancing and really enjoying themselves. We had the boys with us so we had to stand on the outskirts otherwise Daniel and I would have been right in there dancing too.
